What is Kombu?

Kombu is a type of edible seaweed or kelp that is high in glutamic acid and is used in East Asian cooking. It's made from the stem of the kelp plant and is dark greenish or blackish in color. 


Kombu is a popular diet food because it has very few calories and is the most potassium-rich sea vegetable. It's also a good source of iodine, dietary fiber, and enzymes that can break down complex sugars.
