Elevated Fish and Chips

Padma Lakshi: "Ali and Amar, how did the day go for you guys?"


Chef Amar: "I felt pretty well."


Padma Lakshi: "You were happy with your dish?"


Chef Ali: "Even if we were happy before, listening to your thoughts, and learning your expectations on elevating the dish? It makes sense right now."


Gail Simmons: "But I don't want you to think that you're here because you didn't deconstruct the dish."


Tom Colicchio:"Yeah. You're here for one reason. The batter wasn't crispy. The best part of fish and chips. Crispy fish. That's it."


Padma Lakshi: "And everybody seemed to enjoy your chips. There was a good amount of vinegary flavor. It was literally just the crust on the fish."


Brett Graham: "What ingredients did you use in the batter?" 


Chef Amar: "Whole eggs, flour, cornstarch, baking powder."


Padma Lakshi: "There was something that was so flat about it."


Brett Graham: "The whole eggs (instead of just egg whites) -  that I would have said would have just made it a little bit more cakey."


Padma Lakshi: "It's a little doughy. What you're hearing from all of us in one way or another is that we missed that tactile fun of eating fish and chips."
