For his showstopper celebrity bust in Cake Week of Series 11 of The Great British Baking Show ™, Mak made a lemon Madeira cake with Redcurrant Jam.


A Madeira Cake is a form of sponge that we don't see very often, so let's take a moment to discuss it.


Unlike the airy lightness of a Genoise sponge or the flexible, rollable texture of a Swiss roll sponge, Madeira cake boasts a firmer crumb. Originating from Portugal and much-used throughout Europe, it is traditionally flavored with lemon zest, adding a delightful tang. This denser structure makes it ideal for slicing without crumbling, perfect for layered desserts or enjoying with tea. Its robustness also lends well to carving and shaping - that's why Mak used it for his showstopper.
