Noel Fielding: "So for your semi final signature, the judges would like you to bake two batches of eight laminated breakfast pastries. Your pastries can be any design, but at least one batch must be filled or topped."
Alison Hammond: "Remember, this is patisserie week, so the judges are looking for a fantastic finish."

Note: To give the bakers enough time to present two perfect batches of breakfast pastries, for the first time ever, the judges have allowed them one hour to prepare their dough so that it can rest overnight.
Paul Hollywood: "This is undoubtedly one of the most difficult challenges that the bakers will face."
Paul Hollywood: "So we're looking for folds of dough and butter. Now, the yeast in the dough will grow, then the butter will melt and create a beautiful honeycomb."
Prue Leith: "We're asking for beautiful lamination, so it's flaky and you can see every single layer."
Paul Hollywood: "You want a finish that's crispy, golden brown on the outside, and it packs a punch with the flavoring inside."
