Aktar Islam: "Your malt loaf. Have you chosen the right fruits and berries that you've used there?


Calum: "Hopefully, so, I mean, and these berries I love to use at this time of year.

"I mean, it's a lovely loaf. I probably would have had it slightly less toasted."

Aktar Islam: "You've been really generous with the truffle. Do you think some of the flavors on the plate are overshadowing such a decadent ingredient?"


Calum: "I guess that's why I went pretty heavy on it with the truffle on top."


Final Judging

Aktar Islam: "Calum, for your dish. "Calum's Road". That parfait was delicious. Had a really silky mouth feel. So well done. The truffle, it needed to stand out and shine, but it didn't because of the pickled walnut. Get that balance right. The malt loaf and the locally foraged fruits, I thought that was fantastic. Overall, I really enjoyed this dish."
