Aktar Islam: "Calvados seems to be the dominant flavor in your bavois?"
Calum: "In the process of making it, I tasted it, and then I thought it might need a touch more. I'm kind of regretting that now."
Peers, tasting behind the scenes
"Flavors are lovely. I'd say a touch too heavy on the booze."
"Very Scottish, that, though, isn't it?"
Back in the Judging Room
Aktar Islam: "Your salted shortbread, serving it as a crumb, was that the right decision?"
Calum: "Hopefully. I kind of left some chunkier bits, so you really get that salty hit. I really love that about it."
Peers, tasting behind the scenes
"I quite like that saltiness coming from the shortbread."
Back in the Judging Room
Aktar Islam: "What comes to mind when you have this sorbet? What flavor hits you first?"
Calum: "The acidity. The apple is quite nice. I think it kind of balances it."
Peers, tasting behind the scenes
"Something a bit watery about that sorbet."
"I was hoping it would be a little bit more acidic."
