This is a set mousse that can be piped. It is less sweet than you would want for a dessert - more suitable for a savory dish. Don't serve it close to anything too hot - it will melt.

Ingredients

1 Granny Smith apple
2 teaspoons brown sugar
1/4 cup apple cider
1 tablespoon lemon juice
3 sheets gelatin
pinch cinnamon
1 tablespoon cold water
2 cups whipped ricotta

Instructions

Peel and core apples then cut into small dice.

Combine apples, sugar, apple cider, and lemon juice in a pan.

Bring to a boil over medium-high heat, stirring.

Turn heat down to low, cover, and let simmer for 10 minutes, stirring occasionally.

Remove lid, and continue to cook, for 5-10 minutes until apples are tender and transparent.

During final 5 minutes of cooking, stir gelatin into 1/4 cup of cold water and set aside to bloom.

Blend apples until smooth.

Whisk bloomed gelatin and cinnamon into hot apples until well combined.

Set bowl in cold water bath, making sure water does not spill over into pan.

Whisk apple mixture occasionally for about 15 minutes until it cools completely. Remove pan from water.

Whisk in 1/3 of whipped ricotta. Gently fold in rest of ricotta until well mixed.

Pour into a bowl, cover, and refrigerate before piping.
