Although Adam's canape is described as an apple emulsion, all the shots we see of his finished dish show that the apple thing is piped and holds a shape - I think of it more as a savory mousse than an emulsion. I could easily be wrong, but I suspect there is gelatin in the mousse. I've experimented and this is a working recipe.
