Glaswegian. David is former chef at the Jupiter Artland Art Gallery in Edinburgh, where he cooked robust recipes with a delicate touch.
David: "I've started to really focus on Scottish cuisine. I try and challenge myself with lots of very visual dishes, but ultimately it has to be delicious. Here at Jupiter Artland, we operate an estate to plate ethos. We try and use as much as we can from the gardens. This year's brief has been fantastic. I've been spoiled for choice, being a Scotsman. Getting to the banquet for me would mean everything and it would make my family proud."
