Newcomer Joe Fallowfield from Cornwall brings his distinctive Asian fusion style to the competition.
Joe: "I think I've got four great dishes and four great themes. I want to smash it for the Southwest."
Joe from Port Levin has been head chef at 3 Rosette Fallow Fields in the Housel Hotel for six years.
Joe: " I didn't always plan to be a chef. When I was younger, I really wanted to be a UN Peacekeeper. When I was 16, I got a job as a kitchen porter at a local pub. That's what kind of made me want to be a chef. So my menu is absolutely always based really on things that I want to eat. You might look at the menu and think it's not necessarily every single thing that you would choose. You go, oh, actually I like artichoke ice cream. I am absolutely over the moon to be flying the flag for Cornwall. Just can't wait to get to it."
