Chef director and restaurant owner Nicholas B. from Somerset is laser focused on the race to the banquet. 

Nicholas: "My goal this week is to get through to the final. Simple as that."

Nicholas: "My food's always been very much about the ingredients, very much driven by flavour over technique. I've kind of leaned into the classics over the years, and it's definitely helped form a backbone of my cooking. Looking ahead, I want to win more awards, and I'm desperate to get to the banquet in the Great British Menu."
