What is a canelé?

Canelés (also spelt cannelés) are small French (from Bordeaux) pastries with a caramelized shell and a soft, custard-like interior. They are traditionally sweet (think rum, butter, vanilla) but in this case Chef Cal made a savory canelé. What's important about the Canelé is that it has a crunchy, crispy exterior and a gooey, smooth interior.
