What is a plancha?
A plancha is a flat-top griddle that's commonly used in Spanish cooking. The word "plancha" is Spanish for "cooking plate". Planchas are similar to grills, but they can reach higher temperatures, up to 800°F, and distribute heat more evenly. This makes them a good choice for cooking delicate foods like fish and vegetables without burning them.
