Andi Oliver: "Scott's hoping to stay in the competition with his rival pollock dish called "So Can You", featuring a complex smoked kipper with dashi sauce. It's inspired by postboxes that were painted gold in the hometowns of gold medalists during London 2012."
Chef Scott: "My local postbox was painted gold during the London 2012 Olympics, and it was because Kat Copeland, who is a rower, won the gold medal. It's in honour of her, and I've got a little nod on my dish with some potato boats as well."
Aktar Islam: "So fish. Beautiful piece of fish. What are you going to be doing to it?"
Chef Scott: "I'm just going to take this beautiful bit of the loin at the top here, take it down into portions, and then line a ring mould with some nori seaweed. Going to pack in the fish and just slowly, gently steam it on the plancha."

Altar Islam: "Yeah, it sounds fantastic. And I can see him delivering something that could be quite knockout."
