Pretty Young Rebel

Calum: "My dish is called A Pretty Young Rebel and it is based on Flora MacDonald who rode Bonnie Prince Charlie to safety on the Isle of Skye. And so she dressed him up like one of her maids and he managed to get away."


Calum: "So I'm making an apple and calvados bavarois. Also, shortbread and then apple and drambuie sorbet. Then a little bit of a white chocolate and pine aerated chocolates."

With his apple and drambuie sorbet ready and his shortbread baked, Calum makes his bavarois with apple and calvados puree.


It's mixed into a crème Anglaise before piping it into molds to lightly set.


Plating

After knocking up a drambuie and tequila cocktail, Calum's apple and Calvados bavarois jellies are coated in a pine gel made with apple puree and infused with foraged Douglas fir.


Now, crushed salted shortbread is added.


 Next, Callum, plates drambuie and apple sorbet. And the dish is finished with aerated white chocolate infused with larch oil before being garnished with foam of foraged sorrel leaves.
