Pineapple and Coconut Sandwich Cake

Sophie (seen squeezing spare liquid from her fresh pineapple): "I'm not doing too crazy. I don't want to squash it".
Voice-Over: "Sophie will sandwich her squeezed pineapple and coconut sponges with coconut. Italian meringue, buttercream."
Sophie: "I just want to avoid too much leakage into the batter. Done it without before it was fine. It's just a precaution, really."
Mary Berry: "It's very neat. The piping is good. Oh, look at that sponge. I think that texture's lovely. "
Paul Hollywood: "Pineapple flavor comes walloping through. You must have dried the pineapple a bit, did you? That's delicious. I mean, it really is."
Mary Berry: "Oh, my gosh. The pineapple that comes through there is delicious. And then that silkiness that comes from the italian meringue just works so well with that. I'd have another piece of that."
