Chilled Melon Soup

This is the perfect, chilled summer soup. The soup uses Olive Oil for smoothness and a wonderful texture.
Ingredients
1 ripe cantaloupe melon
1 teaspoon red chillies, chopped
1 tablespoon white wine vinegar
1 tablespoon extra virgin olive oil
1 pinch of salt
5 oz ice cubes
20 g smoked rice powder
Instructions
Peel and de-seed the melon, then put in a blender with the rest of the ingredients. Blitz until smooth, then sieve the soup, check the seasoning and chill in the fridge until ready to serve.
Serve sprinkled with the smoked rice powder.
