Poached Fish with Olive Oil

Poaching fish (in this case, fat chunks of white cod) in olive oil adds a buttery silkiness to the fish, and makes it far less likely that the fish will end up overcooked and dry.
Ingredients
4 cups extra virgin olive oil
Handful of fresh basil leaves
4 fat chunks of fresh cod
sea salt
30 g smoked rice powder
Instructions
1) Put the olive oil into a pan that will hold the fish comfortably. Add the basil leaves and turn on the heat. Don't let it get hot enough to smoke.
2) Pat sea salt over the cod.
3) Carefully lower the fish into the olive oil. Keep it on a low heat until the translucence has gone and the fish looks perfectly cooked. It will take 8 - 12 minutes, depending on the depth of the fish. If you prefer to cook it in a low oven, that works too.
4) Sprinkle with rice powder to serve.
