White Chocolate and Raspberry Croquembouche

Great British Baking Show ™ - Judging
Illyin: "I am doing two flavors. So I have a white chocolate Diplomat with raspberry jam and then a brown butter caramel with hazelnut and amaretto Diplomat."
Voice-over: "Illyin will decorate her colorful croquembouche with micro sponge Afros, edible flowers, and isomalt Afro silhouettes."
"I love the colors."
"The colors look amazing. Obviously, structurally, it's not sound."
Illyin: "This one's the raspberry and white chocolate."
Prue Leith: "My goodness. That cream looks wonderful. I think that's beautiful. Cream is lovely. The raspberries nice and fresh. And pastry is nice. It's thin. It's baked through pretty well."
Illyin: "This is the brown butter caramel, and then hazelnut and amaretto."
Prue Leith: "I think it is absolutely delicious. This is so good."
Paul Hollywood: "Delicious. Almost looks like a praline because you've got the caramel there as well. I think what partially the problem is because the rolls are so big, you fill them with a very soft cream. That's why it's collapsed. But I like the flavors. I think the flavors are excellent."

About The Great British Baking Show ™
The Great British Bake Off ™ (often abbreviated to Bake Off or GBBO and referred to in the United States as The Great British Baking Show ™) is a streamed British baking competition, in which a group of amateur bakers compete against each other in a series of rounds, hoping to impress the judges with their baking skills. One contestant in The Great British Baking Show ™ is eliminated in each round, and the winner is selected from the three contestants who reach the final.
The Great British Baking Show ™ operates on a weekly elimination process to find the best all-around baker from the contestants, who are all amateurs. In each episode, the bakers are given three challenges based on that week's theme: a signature bake, a technical challenge, and a show-stopper. The bakes are assessed by the judges who then choose a "Star Baker" for the week, and a contestant is also eliminated. In the final round, three bakers are left and a winner is chosen from the three.
