Norman's Farthing Biscuits

This is a vegetarian version of Norman's Farthing Biscuits. They are light and crispy with just a tiny hint of sweetness.

200 g all-purpose flour
250 g self-rising flour
1 tspn salt
1 tspn caster sugar
75 g European butter
5 - 6 tablespoons ice cold water
100 g Vegetable Crisco

Instructions
Preheat the oven to 350 degrees F.
Mix the flours, salt and sugar together. With your fingertips, rub in the diced, cold butter and Crisco to make the texture of fine breadcrumbs.
Stir in ice cold water - you should use enough to turn the mixture into a stiff dough. Refrigerate to rest.
On a lightly floured worksurface, roll out the dough to about 1/8" thick. Stamp out biscuits from the dough with a round cutter. Score or prick the top with a pattern (this is just for decoration - skip it if you're out of time!)
Cook on wire racks over a baking tray for about 12 - 15 minutes until the biscuits are dry but not changing color. You want them to be pale.
