Slovakian Apple and PoppySeed Pie

Ingredients
1 paté sucrée shell with extra pastry for a lid
6 apples, peeled and coarsely grated
2 tsp ground cinnamon
400 g poppy seeds, ground (a coffee grinder works really well)
200 ml boiling milk
1 tbsp honey
Lemon Curd
Instructions
Blind bake the pastry case.
Mix together grated apples and cinnamon. Pour the boiling milk over poppy seeds and mix well with a spoon. Once the mixture has cooled, add the honey and then stir the poppy seeds into the apples. Spread over the baked pastry case.
Top the poppyseed filling with a shallow layer of lemon curd.
Make a pastry lid and layer on the top. Seal the edges and brush with melted butter or egg yolk.
Bake until golden - approx 25 - 30 mins.
