Classic Spotted Dick
Alison Hammond: "For your Technical Challenge, Prue would love you to bake a British classic spotted dick. Your spotted dick should comprise of a moist steamed suet sponge studded with currants and accompanied with a silky smooth Créme Anglaise. You have 2 hours, 15 minutes.
Paul Hollywood: "So, Prue, why have you chosen spotted dick?"
Prue Leith: "My main memory of steamed puddings are actually school dinners. We thought spotted dick was hilarious, of course, but I think done well, it's delicious."
Paul Hollywood: "What are you looking for?"
Prue Leith: "Perfectly steamed sponge, a nice golden syrup and silky custard. The bakers tend not to steam them for long enough. A steamed pudding needs to steam for at least an hour and a half, otherwise it just won't be properly baked in the middle."
(Judges taste the Spotted Dick.)
