Vegan Parkin (Sticky Gingerbread)

Voice-over: "For your autumn week technical challenge, Prue would love you to bake her vegan take on a bonfire night classic ... Parkin."
"The judges are looking for a rich, sticky, vegan gingerbread sliced into perfectly neat squares with candied ginger on top."
"You have an hour and a half."
Prue Leith: "Parkin is traditionally served at bonfire night, and it's autumnal and warming and spicy and delicious."
Paul Hollywood: "I think it's made it a little bit more difficult, the fact that it is vegan. So how are they going to go about this?"
Prue Leith: "Because there's no egg in there, they're relying on the baking powder. Too little and it won't rise enough. Too much. It'll rise like crazy and then sink."
Paul Hollywood: "Again on the recipe itself. You haven't given them the spice levels."
Prue Leith: "It's got some fresh ginger in there, cinnamon, nutmeg, cloves and dried ginger. They have to work out how much spicing. I like it quite spicy."
