Stilton Cheese

As it happens, I went to school in a tiny English village called Colston Basset which is right at the heart of Stilton Cheese country.

Colston Bassett Stilton is a handmade blue cheese made by Colston Bassett Dairy in Nottinghamshire, England. The dairy has been making Stilton for over 100 years and is one of only five dairies in the world that still produces it. Colston Bassett Stilton is made using pasteurized cow's milk from five local herds, traditional rennet, and special rennet from Neal's Yard Dairy. The curds are ladled by hand from the vat to cooling trays, which is an important step in creating a smooth, rich texture. The cheese is aged for four months and has a fine, bark-like rind and blue veins that become more defined as it matures.


Stilton cheese is strong, salty and beloved by blue cheese connoisseurs.
