"Visually, it doesn't look right. The scallops are hammered. They're just way too severe."

"So you can see right there, you've absolutely cremated the scallops. The actual apple puree tastes good. It's just the composition of the dish. It's just way off."

"I wasn't enamored with too many techniques. You've got to get the basics right. Actually, the puree, the bacon, and a little bit of that scallop that's not overcooked is a pleasant bite."
