Stilton and Broccoli Soup

Ingredients
1 onion
2 heads broccoli
200 g Stilton Cheese
950 ml vegetable stock
200 ml heavy cream
60 g European butter
salt and pepper
Instructions
Dice the onion and cook very gently in the butter. Don't allow any caramelization.
Discard the stalk of broccoli (set it aside for the stock pot) and chop the florets into tiny pieces.
Add the stock to the onion and bring to a rapid boil. Add the broccoli and cook for 10 minutes or longer - until the broccoli is soft. Add the grated Stilton and the cream.
Return to the boil then transfer to a blender and blitz until smooth. Ideally, set aside to cool completely, which will let the flavor fully develop.
Before serving, season with salt and pepper to taste.
