Best ever Sticky Toffee Pudding

The holidays are incomplete without at least one warm, sweet, delicious pudding. If you can only manage one, then make it this one. It's easy, quick, can be mainly prepared ahead of time and will please all ages.

To prepare ahead

Don't try and keep the batter fresh - the moment you add the bicarb to the dates, a chemical reaction begins and you want to get the batter into the oven as quickly as you can. Instead, bake the sponge up to one day ahead and wrap the cooled date cake in foil and store at room temperature. The sauce keeps well chilled. To serve, reheat cake in a 325°F oven for 12-15min to warm through (if you made individual puddings, they'll need 7 - 8 minutes). Reheat sauce until hot.
