Celebrating Charcuterie Boards

I've thrown in my name as a potential "Crackerologist" - an opportunity sponsored by ZENB. They are looking for someone to occasionally contribute to their creativity around their gorgeous plant-based, crispy, crackers.

The successful applicant for this part-time post will win the place by submitting the best Instagram post - where 'best' means the following:

  • Food Ingredients that Complement or Pair with Crackers (35%)

  • Originality/Creativity (35%)

  • Visual Appeal (15%)

  • Most Compelling Caption (15%)

My entry is here and this blog post sets out to tell you about the culinary decisions I made in putting this board together.

First, let me tell you about the crackers that are sold by ZENB. They are bite-size, crispy, flaky and perfectly-seasoned. The photo below shows a handful of ZENB crackers alongside a lemon, to give an indication of size.

ZENB crispy crackers

The crackers come in three flavors: Rosemary n'Chia; Everything n'Dill; Salt n'More. You will see, on my charcuterie board, that I have left a place for all three crackers. (NOTE: It was a rule of the application that the crackers should be left in-waiting.)

The flavors of the crackers drove my choice of foods for my charcuterie board. I also wanted to make sure that the foods were organic, GMO-free and wholesome, in line with the ZENB philosophy and culture.

I have attended many events in my life where a charcuterie board was presented. I've never understood why guests are left to try to cut their own cheese, or tear meat to fit on the bread/crackers. Maybe my vegetarian leanings influence me - I find that if it is left to the public to mix meat and non-meat ... it'll happen, every time!

Therefore, all the foods on my charcuterie board fit perfectly onto a ZENB cracker. I have provided forks and cocktail sticks to spear food for those people who don't like to use fingers.

The foods I prepared and presented are ...

To accompany Rosemary n'Chia

  • Sauteed Mushrooms

  • Crispy Duck Skin

  • Organic radishes

  • Artisan pate

  • Rolls of mozzarella and parma ham

To accompany Everything n'Dill

  • Bite-sized crab cakes

  • Inch-long asparagus spears

  • Smoked salmon hearts

  • Crispy Salmon Skin

  • King prawns

  • Rounds of hard-boiled egg, cooked in dill

To accompany Salt n'More

  • Dried Organic Apricots

  • Toasted blue cheese

  • Rings of black olive

  • Pickled beet

  • Tender bites of steak

Wish me luck, readers. I would really like to be further involved with this great company.
