What is flavored milk?
Whenever you use a recipe that calls for a milky liquid (everything on this page relates to cream as well as milk) then consider using 'flavored milk'.
How is milk flavored?
Usually, the best way to do this is to put the milk into a non-stick saucepan, drop in your flavorings, bring it slowly almost to the boil. WATCH IT CAREFULLY - "burn" is not a good flavor. When the milk begins to rise in the pan, quickly remove it from the heat, drop on the lid, and set aside to cool down. Leave the flavoring in for as long as you can, then push the milk through a sieve and store the flavored milk in a mason jar in your refrigerator.
What is milk flavored with?
Let's talk about savory milk first. Use any, or all, of these:
Half an onion (hint: leave the skin and the roots on)
Bay leaves
Black peppercorns
Parsley
Celery root
And now let's think about flavored milk for desserts or sweet dishes
Vanilla pod
Nutmeg
Cinnamon sticks (careful with these - can be overpowering)
Lemon or orange zest
