The name 'zabaglione' is an Italian word, pronounced zab-buy-own-eh - the French equivalent "Sabayon" is easier to say and more often heard in England and the United States. This is a totally charming dessert for a summer evening.
Ingredients (for 4 servings):
6 egg yolks
7 oz caster sugar
2 lemons
small carton raspberries, rinsed
3 tablespoons Marsala wine (Safeways sell a good brand "Taylors")
Put the egg yolks, caster sugar, finely grated lemon zest, lemon juice and Marsala into a round bottom bowl and stand the bowl over a pan of simmering water. Whisk constantly with a hand whisk over the steam until it thickens. You can't hurry this dish, no matter how badly you want to stop whisking, you just need to keep going until it's a wonderful think mousse-like consistency.
Remove from the heat and keep whisking while it cools. Pour into four glasses and drop in the raspberries.
