In Series 9 of The Great British Baking Show ™, Rahul created a local biscuit which he called the "Fennel and Coconut Pitlaithy Bannock". It mimicked a famous Scottish traditional biscuit. The judges looked forward to tasting the flavor fusion that is fennel seed and coconut, but eventually ruled that he had underplayed the fennel.
As a result, I wanted to test the balance of these two flavors, and I did so in a shortbread base. By the time I got the flavors just right, I decided to turn the dough into Millionaire's Shortbread and I think the addition is marvelous.
