Novelty cake, based on the perfect day off
Noel Fielding: "The judges would love you to make a novelty cake, based on the perfect day off. The cake must have at least two layers of sponge, sandwiching a filling of your choice."
Paul Hollywood: "We're not asking for multiple tiers or any fancy sugar work, so we're expecting that the end result will look good and taste amazing."
Prue Leith: "We're looking for the cake that has wonderful flavor, wonderful texture and looks good. But we're also looking to be able to recognize the scene we're looking at."
Paul Hollywood: "The bakers need to work out what type of sponge to use. They don't want anything to fragile or delicate, because it will get easily squashed. Timing is important too, they can't find themselves decorating hot sponge."

Using sound to check if a cake is cooked
Some bakers find that they can hear a cake baking, as the batter releases liquid during the process of transforming into that perfectly tender crumb. As the cake reaches peak doneness, the steaming sound grows fainter, until finally there's no sound at all.
