Cheese Mostada Croquette

In Episode 3 of Season 21 of "TopChef: Wisconsin ™", the chefs picked different cheeses and were allowed to create any cheese-forward dish they liked. Of the fourteen chefs, a whopping SEVEN chose to do a croquette! In the associated show "A Dish with Kish ™", the Top Chef ™ host Kristen Kish teamed up with celebrity chef Marcel Vigneron, to discuss the making of the croquette. This recipe is my version of their conversation.
Ingredients
2 oz butter
80g all-purpose flour
0.5 tspn yellow mustard powder
0.75 tspn salt
1.25 pints milk
2 tspn Agar-agar
6 oz cheese
2 eggs, beaten
8 oz Panko breadcrumbs
extra-light Olive oil, or canola oil
Instructions
Melt butter, add flour and stir - it should come cleanly away from the sides of the pan.
Add mustard and salt and stir.
Slowly add the milk, stirring as you go until it is smooth and silky.
Stir in the agar-agar, and boil for a full minute, whisking to make sure that the agar-agar dissolves.
Set aside, refrigerating when cool enough.
Once it is completely chilled and set, form perfect spheres.
Dip each sphere into beaten egg and Panko, and deep fry until golden. You'll want to have the oil at 340°F.
