Coconut Nuoc Cham Dipping Sauce

Makes about 2 cups
In Season 22 of Top Chef ™, we saw Shuai using a version of this dipping sauce as part of a much-admired salad dish which included nectarines and shiso leaves.
Ingredients
1 cup hot water
1/2 cup sugar
1/2 cup lime juice
1/3 cup fish sauce
1 tablespoon shredded coconut
2 cloves garlic, minced
1/2 Scotch Bonnet chile, minced (optional)
Instructions
Whisk together water and sugar to completely dissolve the sugar. Add lime juice, fish sauce, shredded coconut, garlic, and chile.
