Yellow Tomato and Fennel Broth

We saw Massimo make this broth to accompany his tuna (toro) in Season 22 of Top Chef ™.
Ingredients
2 garlic cloves, peeled and finely chopped
1 sweet yellow onion, peeled and cut into chunks
2 bulbs fennel, diced
1 tablespoon fennel powder
4 large yellow tomatoes
1 teaspoon gochujang
1 tablespoon Olive Oil
1 pint boiling water
salt and pepper
Instructions
Put all of the ingredients (excluding the water) into a pan and bring slowly to a medium heat, stirring. Reduce the heat and simmer for 20 minutes, stirring often.
Add the water and keep at a low simmer for 30 minutes. Remove from the heat and leave to chill completely for the flavors to develop.
Pulse in a blender and add salt, pepper and more water to reach the taste and consistency that you wanted.
