Zubair's Crispy Tandoori Maple Chicken

Zubair's signature tandoori chicken was modified superbly for the Maple Brunch challenge in Season 22 of Top Chef ™. This is our version of his winning dish.
Ingredients
8 boneless chicken thighs
Marinate:
2 cups balsamic vinegar
1 cup smoked soy sauce
Juice of 1 lemon
1 cup fish sauce
Coating:
Zest of 2 lemon
30g (2 tablespoon) tandoori spice
30g (2 tablespoons) adobo spice
15g (1 tablespoon) maple powder
60g (4 tablespoons) baking powder
2 teaspoons salt
Instructions
Marinate the chicken things in the liquid for at least 4 hours.
Mix the coating ingredients in a ziplock bag.
Pat the chicken breasts dry in kitchen paper and drop them into the ziplock bag and shake well.
Cook the coated thighs in an air-frier for 15 - 20 minutes. Alternatively, deep fry.
Serve with corn cakes and a tangy slaw.
