Matt Lucas: "For your technical challenge, Pru would like you each to make eight bright orange macarons sandwiched with a chocolate and orange ganache."


In private, Paul Hollywood asked Prue Leith: "Orange macarons. Do you not think this is a little bit too hard for our celebrity bakers?"


She replied: "I think it's not impossible. And they'll be very pleased with themselves if they produce something like that. I think the danger is not getting the meringue solid enough. You really have to whisk it until it'll stand, and then they need to fold it evenly through the almond mixture, but not too much because it gets softer and softer, and in the end, it'll run out of their piping bags. And the most important thing is the color is more orange than they think, because it gets pale as it bakes."


Paul Hollywood: " We're looking for crispy on the outside, chewy in the middle with a nice kick of that beautiful chocolate on the inside."
