8 Devonshire Splits

Noel Fielding: "Well, the judges would like you to make a batch of eight delicious Devonshire splits. 

Now, the judges are looking for soft, light enriched dough buns that are split and then filled with a homemade strawberry jam and freshly whipped cream."


Paul Hollywood: "I grew up on these. My dad used to make these in his bakery, and they're just delicious to eat. Where they're going to come unstuck on this particular challenge is timing. We've allowed for two proofs in this. So for the first proof, well, you do it for roughly 45 minutes. As it starts to rise, carbon dioxide begins to be formed. Then a little bit of flavor comes into it. Then they can prepare the roll. So divide it, roll it into balls, then prove it again. 45 minutes on the second one, and it stabilizes the dough and gives it better flavor. It's all down to the proving. The oven bakes for around 15 minutes. You want them beautifully round and symmetrical. You don't want any tears in the side at all. And you want a nice flash of color going all the way down to the bottom."
