Challenge:
8 Devonshire Splits
Noel Fielding: "Well, the judges would like you to make a batch of eight delicious Devonshire splits.
Now, the judges are looking for soft, light enriched dough buns that are split and then filled with a homemade strawberry jam and freshly whipped cream."
Paul Hollywood: "I grew up on these. My dad used to make these in his bakery, and they're just delicious to eat. Where they're going to come unstuck on this particular challenge is timing. We've allowed for two proofs in this. So for the first proof, well, you do it for roughly 45 minutes. As it starts to rise, carbon dioxide begins to be formed. Then a little bit of flavor comes into it. Then they can prepare the roll. So divide it, roll it into balls, then prove it again. 45 minutes on the second one, and it stabilizes the dough and gives it better flavor. It's all down to the proving. The oven bakes for around 15 minutes. You want them beautifully round and symmetrical. You don't want any tears in the side at all. And you want a nice flash of color going all the way down to the bottom."
Time Allowed for this challenge:

"Right now, the size of these is better. Much better. "
"They're quite light, Paul. "
"They are. They're proved. "
"Well, they're big and light. Good jam. "
"Yeah, jam looks good. That's a decent one for the sizes because it's just a shame the cream's not looking nicer than it is."
"But it does look like lots of cream, which I like."

" Bit irregular in shape, these, actually. And it's underproofed. You can tell by the cracks on the bottom. They probably needed another 10 - 15 minutes, but they're soft inside. They've got a lovely flavor. "
"Jam's lovely. "

" A bit underproved again, it seems blown there. Again, it's ripped. It's a little bit small. Not bad, though"

"Again, underproved. Ripped. That's quite dense, that. Look at that one. They're neat, but it's blown. Shame. "

"This one's a bit peculiar. "
"They're massively underprooved. As soon as you press, it goes back to dough again. And they're very dense."
"They are dense. "

"These are not bad, these buns. Underproofed slightly, but it's got a good texture inside. "
"Lovely texture."
"The jam's good. "
"That's delicious. "
"It just needed icing sugar. "

"Moving on to this again, underprooved. See the splits? But they are large. A nice flavor."

"These are very neat."
"They are neat and they are round, but they're a little bit small."
"That's the old thing. Not proved enough."

"These are way too small. These are like golf balls. It's really dense. Needed much longer proving. You can tell when you look at the bottom there. "
"It's ripped and it tastes yeasty. "

"I'm not quite sure what these are. They're not round."
"They're a bit flat. "
"They've almost been under mixed. It crumbles rather than stretches. Don't taste very good, then. Quite dry on the mouth. "
