Lamb PepperPot with Lamb Fat Madeleine

Tristen: "The figgy duff, it's got flavors that I'm really familiar with. Cinnamon and allspice is Used a lot in, like, Caribbean cooking. It kind of leads me toward a Guyanese pepper pot. I'm going to stick to my Afro Caribbean on this one."
Tristen: "I've got a madeleine mold."
Tristen: "This is based on a Guyanese Christmas dish called pepper pot. It usually has a lot of, like, Christmas spices in it. It's going to represent the molasses from the figgy duff. I'm always trying to represent my culture."
Tristen: "This is just going to be a little test madeleine. To hearken back to the cake, my idea is to make a - stick with me here - lamb fat madeleine! I've made a madeleine with a bunch of stuff before. Am I taking this too far? I'm not sure. But to pay more homage to the figgy duck, it needs starch. So I just go for broke. It should work."
Presenting to the Judges
Tristen: "I made something called a pepper pot of braised lamb. For that bread component, there is a lamb fat madeleine with some pickled grapes on top."

"How you doing over on Tristan's?"
"I've got to ask him for the recipe for these madeleines."
"Honestly, I'm impressed he even did madeleines. I mean, they're finicky. And using that lamb fat was really smart."
"The lamb just, like, melting in your mouth. It's really incredible."

"The madeleines are, you know, you expect this kind of work from a pastry chef. Tristan just continues to just impress me, just this level of skill. It's a fantastic dish."
