Kristen Kish: "Chefs, you may have already guessed it. Lionfish is what you'll be working with today for your quick fire, but we are not going to make you break them down."


"Before you get started, though, we have one more ingredient that we want you to work with. Cheese. Just because we left Wisconsin didn't mean we're going to leave all the cheese behind."


Gail Simmons: "The Dutch brought Gouda to the island in the 17th century, and the locals took the leftover rinds and turned them into Curacao's national dish. Keshi Yená.


Kristen Kish: "As you may have guessed, we want to see what you can do with lionfish and gouda. Mixing cheese and fish is often frowned upon in the kitchen. We want to see how you bring these two ingredients together."


Kristen Kish: "Now that you're in the finals, the quick fire will not come into play if you are on the bottom of the elimination challenge. You have only 30 minutes, and whoever makes our favorite dish will take home the final $10,000.
