Miso Honey Cod with Toasted Mushroom Dashi
It was a pre-requisite to use the microwave. Marcel used the microwave to preserve the color of his avocado mousse which was spiced with serrano peppers.
Voice-over: "Judges, before you, you have a honey miso cod. It is joined by a toasted mushroom dashi, which you may add to the bowl. Beneath it, you will find an avocado mousse that has been spiked up a little with serrano. The microwave was employed with the avocado mousse. Marcel set the chlorophyll in the avocado mousse to prevent oxidization or browning."
