Tomato Stuffed with Fregula and Shrimp

Voice-over: "Judges, the chef presented a tomato stuffed with fregula and shrimp. The mandoline? They used that to slice the carrots for the sauce."
Other things we learned in watching the cooking:
Marc Murphy made a 'sauce' by mixing onion, tomato pulp and carrots and flambeeing it in brandy.
He didn't realize just how long it takes for fregula to cook and, indeed, at the end of 35 minutes it was still too chewy.
He sauteed the shrimp very quickly to avoid overcooking, then mixed it in with the tomato and carrot 'sauce'
